Perfectly understandable. Streaming video is the obvious and easy way to share home movies, but sometimes you need to control who can jump into that stream. You may want everyone in the world to enjoy your cat videos, but humans often object when their drunken dancing turns up all over the Internet.

One warning: You can't always play private videos on every device. For instance, my Blu-ray player can play Vimeo videos, but not when they're password-protected.
Youtube
After you've uploaded the video and it's available to everyone, click the Video Manager button near the top of the window or below the video box.
This will list all of your videos. Click the Edit pull-down menu next to the video you want to alter.
Then go to the Privacy Settings pull-down menu and select an option:
Public: The default. Anyone can find and see it.
Unlisted: The video won't appear on any Internet searches, nor will YouTube add a link to it on any page. In other words, there's no way for anyone to get to it unless you give them the URL.
Private: Only people you invite will be able to watch the video. You can invite up to 50 people--but only people with a YouTube or Google account.
I know. The words Facebook and privacy don't really go together. But if you know what you're doing, you can control who gets to see your stuff.
While Facebook uploads your video, pull down the menu which will probably be titled Public. From that menu, pick an option considerably more private.
Vimeo
While Vimeo uploads your video (or after it's done), click the Privacy tab. Then select Only people with a password and enter a password.
I'd also recommend disallowing embedding, and unchecking Download the video.
